Collapse ▲Angie Lawrence, our dedicated Brunswick County EFNEP nutrition educator, led a dynamic opening workshop for the SCAPNC in-service training in Red Springs, NC, in August 19th. This event brought together representatives from approximately 7 counties and 15 Head Start sites.
During the workshop, Angie introduced the Expanded Food and Nutrition Education Program (EFNEP) and its role in supporting Head Start staff, preschoolers and families health and well-being through the Head Start family partnership agreement.
Participants explored the context and goals of the 6 Core Lessons, which include:
- Choosing More Fruits and Vegetables: Encouraging healthy eating habits.
- Fix it Safe: Teaching safe food preparation techniques.
- Plan: Know What’s for Dinner: Meal planning strategies for healthy eating.
- Shop: Get the Best for Less: Budget-friendly shopping tips for nutritious foods.
- Making Smart Drink Choices: Educating on healthy beverage options.
- Choosing to Move More Throughout the Day: Promoting physical activity throughout daily routines.
Angie provided an engaging interactive demonstration of one of these lessons and discussed how it connects to the classroom. Head Start staff were able to taste one EFNEP’s low cost yummy recipes; Easy Fruit Salad.
Ingredients
- 1 (20-ounce) can pineapple chunks in juice, drained
- 1 (15-ounce) can fruit cocktail in juice, drained
- 2 small bananas, sliced
- 1 (8-ounce) low-fat yogurt (try vanilla or lemon)
Directions
- Drain pineapple chunks and fruit cocktail.
- Wash, peel, and slice bananas.
- Mix fruits and yogurt together.
- Cover and chill until ready to serve.
For variation, use the following fresh fruits instead of canned:
- 1 cup grapes, seedless, halved
- 2 cups cantaloupe, cut into bite-size pieces
- 1 cup strawberries, quartered
- 1 cup apple, cut into bite-size pieces
