Carrot Oatmeal Cookie

It’s one of the main tricks for the perfect carrot oatmeal cookie.

For this week’s Whip It Up Wednesday recipe I wanted to share with you these Carrot Oatmeal cookies. These cookies have a batter that is loaded full of nutritious ingredients including sweet carrots, oatmeal, raisins, and a bit of cinnamon. The carrots give this traditional oatmeal and raisin cookie a colorful and tasty twist. They’re really easy to make and are bursting with the sweet flavor of carrot cake.

You might be baking cookies for an event, having friends over, or just in the mood for something sweet but nutritious. Then whip up a batch of these cookies. Change it up by adding your own twist like nuts, apples, zucchini, or cranberries. Whatever you do to make it your own, don’t forget to snap a picture of the variation you decide to try and share it with Nitasha.

NOTE: Did you know that high-fiber foods can help slow the digestion of food in the intestine, which can help to keep blood sugars from rising very rapidly. Beta-glucan, which is a type of dietary fiber found in abundance in oats, may also help improve blood sugar control. Recent research suggests that oats intake has a beneficial effect on glucose control in patients with type 2 diabetes!
